Light and Easy to Digest Soups

Digestion is crucial for good health. When improper digestion occurs, Ama, toxins in the GI form and this is considered the root of all disease in Ayurveda. These light and easy to digest soups are a great way to give your digestive system a rest and improve Agni. These healthy recipes are quick and easy to make.

Celery Soup 
4 celery stalks
½ onion
1 tsp of olive oil
Himalayan pink salt & Black pepper

Sautee diced onion and celery in oil then add 2 cups of water and boil. Add spices to taste. You can also add more water for desired consistency. Puree. Celery increases agni.

Zucchini Soup
2 medium zucchinis cubed
½ small onion chopped
¼ c water
1 tsp olive oil
Himalayan pink salt & Black pepper

Scoop out seeds if they are large, sauté zucchini and onion in oil. Add water and cook. Blend until smooth. Add salt and pepper to taste. Note: Doesn’t look great, but tastes amazing if the zucchini is fresh and not bitter.

Mung Soup

Wash 1 ½ cups of split mung dal. Rinse the dal until the water runs clear.
Boil in 3 cups water
One pinch of Hing (aka Asafetida). -This is a smelly herb that tastes like onions and garlic and reduces gas. It is used in Ayurveda when cooking with beans.
1 inch section of freshly ground ginger. -Try using a garlic press to crush the ginger. Cut into 1/4 in pieces and press.
Cook until dal is soft
Blend with: ½ cup fresh cilantro
1 tsp of ground cumin
½ tsp of salt
A bit of freshly group black pepper
2 tbs of olive oil
